I love dishes with history, such as shepherd’s pie, the classic recipe of which goes back centuries. The pie is essentially a potato casserole with minced meat, but with a story. This ancient dish of British cuisine is sometimes called English, Irish, or Scottish. But in early cookbooks it was called country or cottage pie. Delicious baked goods were made by poor people living in small rural houses (cottages), mostly shepherds.

Pies were baked from pieces of meat left over from dinner. After potatoes were introduced as a staple food for the poor in 1791, baked goods began to be made with mashed potatoes.

Nowadays, the food of the shepherds is to the liking of people of all classes. Recipes from Jamie Oliver and Gordon Ramsay are especially popular. Both recipes claim to be classic, since the cooking principle has been preserved from ancient times, when vegetables are stewed with meat, then covered with a layer of mashed potatoes and baked. Both authors include celery, onions, and carrots in the ingredients, which is also in keeping with tradition.

Classic Shepherd's Pie Recipe

Here is a recipe from Gordon Ramsay.

You will need:

  • Minced meat (lamb, beef, in the modern version chicken is often used) – 500 g.
  • Potatoes - kilogram.
  • Large onion.
  • Large carrots.
  • Garlic - a couple of cloves.
  • Tomato paste - a tablespoon.
  • Worcestershire sauce - 2 tbsp. spoons (can be replaced with soy).
  • Red wine – 250 ml.
  • Chicken broth – 500 ml.
  • Thyme - a small bunch.
  • Rosemary - sprig.
  • Egg yolks – 2 pcs.
  • Celery - several stalks.
  • Parmesan cheese (or regular hard) - 4 large spoons.
  • Pepper, salt, olive oil, milk for puree.

Tip: adapt the recipe to your capabilities, replace ingredients. The lack of some products is not a reason to refuse delicious baked goods; the shepherds didn’t have everything either, but they baked pies.

Step-by-step recipe for making a pie

  1. Boil the potatoes, mash them, adding milk. Pepper the mass. Some recipes mention nutmeg. If you want, put it in puree.
  2. Add the yolks and 2 tablespoons of grated cheese. Stir the mass.
  3. At the same time, start filling the pie. Heat the oil in a frying pan, add the minced meat and fry. Add coarsely grated carrots and chopped onion cubes to the meat. Continue frying, stirring constantly.
  4. Pour in Worcestershire sauce, red wine, tomato, chopped rosemary, celery and thyme.
  5. Turn the heat down to a lower setting. Continue simmering the contents of the pan until the wine has evaporated.
  6. Pour in the broth. After boiling, continue to simmer over low heat until the contents thicken.
  7. Place the finished minced meat in a mold and smooth it out.
  8. Spread mashed potatoes on top and sprinkle with remaining cheese. According to the classics, the surface of the puree is made wavy, or in the form of peaks, as in the top photo.
  9. Preheat the oven to 180 o C. Bake for 20 minutes. A beautiful crust will appear - take it out.

For a huge number of women, baking is a very difficult task, which many cannot cope with at all. In this case, there is no need to worry, because shepherd's pie is very tasty and easy to prepare. There are many different variations of this dish, and you can also adjust its composition yourself.

Recipe No. 1. Standard

Shepherd's pie, the classic recipe for which is very simple, turns out very tasty and satisfying. The whole process will take you approximately 15 minutes. For this dish you need to take 700 g of mashed potatoes, which you prepare in the usual way. In addition, you need approximately 430 g of ground beef, 1 tbsp. peas, chopped onions, carrots and hard cheese.

The minced meat must be fried in a frying pan, and then add onions, peas and carrots. Leave to simmer for 15 minutes, stirring occasionally. Take a baking dish and spread the filling in an even layer and top with mashed potatoes. In a preheated oven at 180 degrees, the shepherd's pie will cook for about 10 minutes. When the time is up, place the cheese on top and place in the oven for another 5 minutes.

Recipe No. 2. With mushrooms

The English shepherd, which we will now look at, will appeal to both adults and children. To prepare this dish, no special culinary skills are required; even a novice cook can handle it. For the pie you need to take: 5 medium-sized potatoes, approximately 420 g of champignons and the same amount of minced meat. In addition, you need about 400 g of the variety, an onion, 2 small carrots, a chicken egg, half a glass of flour, vegetable oil, several cloves of garlic, spices, as well as milk and butter, which is useful for puree.

You need to prepare regular mashed potatoes from potatoes. Vegetables need to be cut into small cubes, and mushrooms into 4 parts. The cheese must be grated on a coarse grater. Over medium heat you need to fry the onions, carrots and garlic, after a few minutes add the mushrooms and simmer under a closed lid for 5 minutes. Then add the minced meat and spices to the vegetables and fry, stirring constantly. Add half the chopped cheese to the mashed potatoes and mix thoroughly. In a dry frying pan, fry the flour until it changes color and mix with the minced meat and vegetables. Now it's time to put everything in the pan, in this order: filling, mashed potatoes and cheese. In an oven at 150 degrees, the cake will bake for no more than 20 minutes.

Recipe No. 3. With chickpeas

Shepherd's Pie with Beans is heartier and makes a great option for dinner and lunch. For this dish you need to take approximately 700 g of mashed potatoes, in general, the amount depends on the form you use. In addition, you will need 5 large champignons, a couple of medium-sized onions, a large carrot, 1 tbsp. chickpeas, egg, spices, herbs, olive oil.

The chickpeas must first be soaked overnight and then boiled until fully cooked. Fry chopped onions, carrots and mushrooms in olive oil. After a few minutes, add the minced meat to the frying pan and, stirring constantly, fry for 10 minutes. After this, pour water there, 1 cm above the filling and leave to simmer for an hour, stirring occasionally. Now you need to mix everything with chickpeas, add salt, pepper, spices and herbs. You should have a juicy filling, but without excess water. Grease the pan with olive oil, add the filling, and the next layer is mashed potatoes. On top you need to grease everything with egg, which should be mixed in advance. a spoonful of water and a pinch of salt. The shepherd's pie will cook in the oven at 220 degrees for 20 minutes. As a result, a beautiful golden brown crust should form on the surface.

Recipe No. 4. With peas

Shepherd's pie will literally be your lifesaver when you don't have time to prepare dinner or you have unexpected guests. For this dish you need to take 0.5 kg of minced lamb, 1 kg of potatoes, 2 carrots, the same amount of onions and 1 can of green peas, approximately 250 g of hard cheese, 2 eggs, a bunch of dill, salt, pepper and butter.

The potatoes must be boiled and mashed, and then mixed with eggs, butter, spices and grated cheese. In a frying pan you need to fry chopped onions and carrots. Then add the minced meat and spices and simmer for a while. After this, the minced meat must be mixed with peas. The mold should be greased with oil and laid out in layers: part of the mashed potatoes, the filling and again mashed potatoes. To make the dish unusual, you can put the top layer of puree using Bake the pie for half an hour in the oven at 200 degrees. Shepherd's Pie, the recipe for which we just looked at, is best eaten warm. If you can’t eat the whole dish at once, reheat it in the microwave later.

You can adjust the pie recipe to your liking. For example, you can replace minced meat with chicken or turkey. In addition, you can use different vegetables: leeks, tomatoes, etc. Cream sauce and various spices are perfect to improve the taste.

The classic Shepherd's Pie recipe is quite simple.

To prepare it you will need the following ingredients:

  • 550-600 g potatoes;
  • 250 g pork or lamb meat;
  • 3-4 onions;
  • 150 g thick cheese;
  • egg;
  • 50 ml cream;
  • 50 g tomato paste;
  • 2-3 tablespoons of flour;
  • salt and spices.

Operating procedure:

  1. Cut the peeled and washed potatoes and boil in salted water.
  2. Remove the skin from the onion, fry until golden brown, then add the ground meat, salt and seasonings, and continue cooking for a few more minutes.
  3. Remove the pan from the heat, add tomato paste to the filling and stir.
  4. Puree the boiled potatoes and dilute with cream, and when they have cooled a little, add the egg, flour and mix until smooth.
  5. Grind the cheese and pour it into the mashed potatoes.
  6. Place half of the prepared mixture in a high-walled dish, place the minced meat on top, then cover it with the rest of the potatoes and bake.

The shepherd's pie is ready when the top is browned and has a light golden crust.

Recipe from Jamie Oliver

Jamie Oliver, known as the Naked Chef, is the host of popular cooking shows and the author of many recipes. Currently, more than a dozen cooking manuals written by him have been published, including step-by-step instructions for preparing shepherd's pie.

To work you will need:

  • 400 g potatoes;
  • 250 g lamb meat;
  • 150 g frozen peas;
  • 250 g canned tomatoes;
  • 30 g butter;
  • 25-30 g curry paste;
  • small red onion;
  • one red pepper;
  • several garlic cloves;
  • a small piece of ginger root;
  • fresh coriander;
  • mustard seeds;
  • olive oil;
  • salt and black pepper.

Recipe from Jamie Oliver:

  1. Divide the onion and red pepper in half, finely chop one part, and puree the other in a blender along with ginger and garlic cloves.
  2. Fry the minced lamb seasoned with curry paste in butter, and when it turns light brown, add the chopped onion and red pepper and continue cooking until they soften.
  3. Put the chopped tomatoes into the minced meat, stir and wait until it boils, then reduce the heat to low and simmer the mixture until it becomes thick, add the peas, salt and ground pepper.
  4. Boil the potatoes, puree and mix with mustard seeds, chopped coriander, chopped garlic, ginger, onion and pepper in a blender, don’t forget to add salt.
  5. Place the minced meat in a baking dish, place mashed potatoes on top, smooth and place in the oven.

On a note. If you can’t buy curry paste, you can replace it with dry seasoning, and use other herbs instead of coriander.

Recipe from Gordon Ramsay

Gordon Ramsay is a famous British chef whose restaurants have been awarded 16 Michelin stars.

To prepare shepherd's pie according to this chef's recipe, you will need the following ingredients:

  • 600 g lamb;
  • 800 g potatoes;
  • 100 g thick cheese;
  • 2 egg yolks;
  • 0.5 liters of meat broth;
  • a glass of red wine;
  • bulb;
  • carrot;
  • several garlic cloves;
  • 30 ml Worcestershire sauce;

  3. When the alcohol has evaporated, pour the broth into the minced meat, and then wait until it boils and thickens.
  4. Boil the potatoes, mix with egg yolk and half the grated cheese, add spices and salt.
  5. Distribute the minced meat over the bottom of a heatproof dish, place the potato mixture on top and sprinkle with the remaining cheese.

This pie will need to bake in the oven for just over a quarter of an hour. It will be ready when the surface turns golden brown.

Shepherd's Pie from Yulia Vysotskaya

To prepare shepherd's pie according to Julia Vysotskaya's recipe, you will need the following components:

  • 5-7 potatoes;
  • 800 g minced lamb or beef;
  • 2 onions;
  • carrot;
  • garlic cloves;
  • 100 ml meat broth;
  • 50 ml milk;
  • a little butter;
  • a few drops of Tabasco sauce;
  • vegetable oil;
  • salt and black pepper.

Sequencing:

  1. Boil the potatoes and mash with butter and milk.
  2. Grind the carrots, cut the onion into cubes and fry in vegetable fat.
  3. Add chopped meat, garlic, broth, salt, spices and continue cooking.
  4. A few minutes before removing the pan from the heat, pour in the Tabasco sauce and stir.
  5. Place the minced meat and vegetables in a mold, place mashed potatoes on top and place the dish in the oven for half an hour.

On a note. If desired, it is permissible to supplement the meat filling with leeks cut into half rings.

Cooking option with chicken

There is always room for creativity in cooking, and you can safely make adjustments to classic recipes for preparing certain dishes. For example, make shepherd's pie with chicken, canned corn and a mixture of Provençal herbs.

For cooking you will need:

  • 400 g chicken;
  • 800 g potatoes;
  • 500 ml milk;
  • 250 g green peas;
  • 150 g sweet corn;
  • 120 g thick cheese;
  • 2-3 garlic cloves;
  • 50 g flour;
  • a mixture of Provencal herbs;
  • salt.

Procedure:

  1. Boil the potatoes, puree and add butter, milk, flour and crushed garlic.
  2. Cut the chicken into small pieces and fry until golden brown.
  3. Mix the meat with salt, spices and herbs, add peas, corn and continue cooking.
  4. Place the meat filling in a fireproof dish, cover with mashed potatoes and sprinkle with grated cheese, then place in the oven.

The chicken shepherd's pie will be ready to eat in about half an hour.

Baking with lamb and mushrooms

Another way to make shepherd's pie is to add fresh or canned mushrooms to the ground lamb filling.

For cooking you will need:

  • 600 g lamb;
  • 750 g potatoes;
  • 450 g mushrooms;
  • 100 g sweet corn;
  • bulb;
  • carrot;
  • 100 ml milk;
  • fat sour cream for greasing;
  • butter;
  • a little flour;
  • salt and seasonings.

Sequence of work:

  1. Peel the onions, mushrooms, carrots, chop and fry until soft.
  2. Add minced lamb, salt, seasonings to the roast and cook until the mixture becomes golden and crumbly, then add sweet corn, mix the filling and remove from heat.
  3. Boil the potatoes, mash them into a puree, adding butter, flour and salt, and then dilute with milk.
  4. Place half of the mashed potatoes in the pan, place the filling on top, cover with the remaining potatoes and grease the top of the pie with heavy sour cream.

If desired, you can replace the sweet corn with boiled beans, green peas, or omit the beans altogether.

Traditional English shepherd's pie

Traditional English shepherd's pie is made with lamb or pork.

To work you will need:

  • 500 g meat;
  • 700 g potatoes;
  • 120 g hard cheese;
  • 2 eggs;
  • 100 ml milk;
  • 50 g butter;
  • bulb;
  • several garlic cloves;
  • tomato puree;
  • salt and seasonings.

Sequence of work:

  1. Boil the potatoes, add salt and mash.
  2. Add milk, butter and grated cheese, reserving a little for dusting, then beat in the eggs and mix until smooth.
  3. Fry the chopped onion and garlic, then add the minced meat and tomato paste, add salt and pepper and continue cooking.
  4. Place half of the potato mixture into the pan, spread the filling and cover with the remaining mashed potatoes.
  5. Sprinkle the pie with cheese and place in the oven to bake.

The dish includes three components: minced lamb, vegetables and mashed potatoes. You can prepare minced meat yourself by passing the meat through a meat grinder or finely chopping it with a knife.

For vegetables we will use red sweet onions and bell peppers, grinding half to a puree, and cutting some into thin feathers so that they can be felt in the filling. Peas will add color and change the consistency of the filling, making it more interesting, so be sure to add it. Curry paste will be responsible for the spiciness - Jamie Oliver uses ready-made Madras paste bought in the store. If you were unable to find it, then prepare it yourself (look for the recipe on the website).

After the meat has been stewed with vegetables and spices, all that remains is to cover it with mashed potatoes. The potatoes will also need to be cooked in a special way, with the addition of fried black mustard seeds and cilantro. The taste will only benefit from this!

At the end, the shepherd's pie will need to spend 40-45 minutes in the oven until it has a wonderful crust on top, after which it can finally be tasted. The result is definitely worth your effort. The dish is spicy, spicy and satisfying - an excellent option for a family dinner when you want new gastronomic experiences.

  • tomatoes in their own juice – 200 g
  • potatoes – 400 g
  • black mustard seeds - 1 chip.
  • frozen green peas – 100 g
  • salt and black pepper - to taste
  • cilantro – 1/2 bunch.

Preparation

    Prepare the vegetables: peel the onions and garlic; remove the skin from a small piece of ginger root; We clean the bell pepper from the seeds. Divide the onion and pepper in half. We cut one part into strips, and puree the second in a blender along with ginger and garlic cloves.

    In a deep frying pan, wok or saucepan, melt a piece of cow butter (20 g). Place minced lamb into the heated fat. Season with hot madras curry paste.

    Fry the minced meat over high heat for about 5 minutes, stirring all the time until it is fried on all sides to a pleasant light brown color.

    Then add the onion and red pepper, previously cut into cubes. At the same stage, pour in the dressing that was prepared in the blender. We continue cooking for about 10 minutes, but over medium heat, stirring from time to time. A wonderful aroma should develop and the vegetables should become soft.

    Now add finely chopped tomatoes in their own juice to the minced meat (if they are thick, you can add a little water). Stir, wait until it boils, reduce heat to low and simmer for 30 minutes. As a result, excess moisture should evaporate, the minced meat should be fully cooked and thicken.

    At the very end, add green peas (frozen, straight from the pack) to the filling. Simmer for another 5 minutes, stirring. In the process, adjust the amount of salt to taste.

    Turn on the oven at 180 degrees. Transfer the finished filling into a heat-resistant form. And while it cools, we prepare mashed potatoes. Cut the peeled potatoes into medium-sized pieces, place them in a saucepan, pour boiling water over them and add salt to taste. Cook until fully cooked for 15-20 minutes.

    When the potatoes are cooked, place them in a colander. Return the saucepan to medium heat, heat a little vegetable oil (1 tbsp) and a piece of butter (10 g) in it. Pour black mustard seeds and finely chopped cilantro stalks into it. Fry for 1 minute.

    Then remove from the stove. Return the boiled potatoes to the saucepan, add chopped cilantro leaves and the remaining oil (20 g). Mash into puree. Adjust the amount of salt to taste.

    Place hot mashed potatoes on top of the meat filling. Level with a spoon so that the layer is dense. And with a fork we go over the top, as if loosening the surface for a beautiful browning. Pour vegetable oil on top.

    Place in a hot oven and bake at 180 degrees for 40-45 minutes. For beauty, you can sprinkle the finished pie with a little sweet ground paprika if you want. The dish should be served hot. Bon appetit!
