Homemade waffle cake. How to quickly make a cake from crispy waffle cakes

Who said that waffle cake is necessarily a sweet dessert? It can be anything - an independent main course, an appetizer, and, of course, a dessert too.

Let's start with a sweet treat - a popular waffle cake with condensed milk. To get the taste of childhood, let's bake homemade waffles ourselves. What ingredients are needed for this recipe?

  • wheat flour and granulated sugar - a glass of one and the other;
  • natural cow butter – 100 grams;
  • sour cream (fat) – ½ kilogram;
  • raw eggs - 2 pieces;
  • walnuts – at least 150 grams;
  • condensed milk (it’s better to take boiled milk) – one jar;
  • baking powder - teaspoon.

First of all, let's knead the dough. Melt the butter in a water bath. We are waiting for it to cool down.

Pour it into a deep bowl or pan. Add granulated sugar and break eggs into a container. The contents need to be turned into dense white foam, so turn on the mixer. When ready, add a glass of warm water. The second time you need to mix it carefully with a spoon. Combine flour with baking powder into a total mass and sift. And then slowly, in a thin stream, pour the mixture of bulk products into the sugar-egg mixture. The dough should be quite liquid, without lumps. We will bake golden waffles from it in an electric waffle iron.

Now let's make the cream. Beat condensed milk and full-fat sour cream with a mixer until a fluffy cream comes out. Mix in crushed and lightly fried nut kernels. Lubricate each layer with the sweet nut mixture and assemble the cake. Don't forget to coat the top and sides with cream. And put it in the refrigerator for some time to soak.

With curd cream

Waffle cake made from homemade waffles with curd cream, as you understand, is also a sweet dessert. But it is not as greasy as the previous one. We will make the cakes in the same way as described above.

And we will create the cream from:

  • cottage cheese - take 200 grams;
  • 20% fat cream – 100 grams;
  • gelatin - 10 gram sachet;
  • granulated sugar – ½ cup;
  • vanillin - a drop.

Immediately pour the gelatin with warm water, following the instructions on the package.

In an enamel pan, combine cottage cheese, vanilla, granulated sugar and cream. We turn everything into a homogeneous composition. You can use a mixer. Pour gelatin into the almost finished cream. Mix again, but now without fanaticism, with a spoon.

Leave the mixture alone for a couple of hours and let it thicken. When the cream reaches the desired consistency, coat the cakes with it and stack one on top of the other. We also don’t ignore the sides and top of the cake.

If this cream seems boring, You can add nuts, candied fruits, chocolate chips or chopped dried fruits to it until it thickens. The kids will be delighted.

Recipe with custard

Another option for a sweet waffle treat is to use cake custard. With this addition, the dessert will be good in any case - even from home-baked waffles or from waffle cakes purchased at the supermarket. But in the second case there is a significant advantage - saving time.

We have already told you how to bake waffles.

If they are store-bought, we will prepare only the cream from:

  • milk - half a liter;
  • raw eggs - two pieces;
  • butter – 100 grams is enough;
  • granulated sugar – ½ cup;
  • flour - 50 grams.

Beat eggs with granulated sugar, preferably with a mixer. Place the sugar-egg mixture in a water bath. By the way, Some people recommend using only yolks to make custard. You can try both methods and decide which you like best.

Pour in the milk in a thin stream and whisk without stopping. As soon as we see that the mixture has begun to boil, add the flour. We will do this carefully, pour it directly under the mixer blades. As soon as the cream reaches a thick, homogeneous consistency, turn off the device and remove the dishes from the stove.

When the cream has cooled completely, add butter to it. Cold! No need to melt it! And let the mixer work again until the product becomes “glossy.” That's it, you can apply the cream and decorate the cake.

Step-by-step preparation with chocolate

Chocolateaholics will enjoy a cake made from waffles and chocolate. Moreover, baking waffles with your own hands is not at all necessary. We offer a large selection of ready-made semi-finished products from different manufacturers.

Products you will need:

  • waffle cakes - take six pieces;
  • chocolate - bar;
  • butter - 200 grams is enough;
  • granulated sugar – ½ cup is enough;
  • milk – at least 100 grams;
  • powdered sugar and coconut flakes - enough for decoration.

First melt the butter. Some find it convenient to do this in a water bath, while others place the pan directly on the burner.

We wait until the oil finally floats. Sprinkle granulated sugar and crumble the chocolate. Cook the butter-chocolate mixture for five minutes, remembering to stir. When the mixture acquires a pleasant, uniform color, remove. We are waiting for the “semi-finished product” to cool and turn into chocolate cream.

You can start assembling. We do this similarly to the previous recipes, sparing no cream for each cake, top and sides.

The chocolate cake should spend the night in the refrigerator. And then decorate with powdered sugar, coconut shavings and send to the table.

Stuffed with meat and mushrooms

From desserts we move on to more “serious” dishes that can serve as a full meal. “Napoleon” with mushrooms and chicken belongs to this category.

For it you will need:

  • waffle cakes - 7 pieces;
  • boiled chicken breast – 200 grams;
  • bulb;
  • boiled carrots - two root vegetables;
  • champignons (marinated, but not spicy) - a jar;
  • hard-boiled eggs, a couple of pieces;
  • Bell pepper;
  • mayonnaise and spices;
  • garlic - at least three cloves.

Chop the mushrooms and onion. They need to be lightly fried in a frying pan with vegetable oil - literally two to three minutes. As soon as all the liquid has evaporated, add chopped chicken, very finely chopped garlic, salt and selected spices to the onion-mushroom mixture. Warm up for another minute.

Peel the peppers, remove the seeds, and chop as finely as we can. To make this more convenient, you can microwave the pepper for two minutes.

Pass the carrots and eggs through a medium-mesh grater: grate each component into a separate bowl and add a clove of garlic, processed with a garlic press.

champignons – at least 300 grams;

  • onion heads - a couple of pieces;
  • carrot (medium);
  • mayonnaise (ideally homemade) – 200 grams;
  • hard cheese – 100 grams is enough;
  • greenery.
  • Place the fish fillet and chopped onion into the blender bowl. Grind. Then we process in the same way one by one: mushrooms fried with the second onion, cheese, carrots. We put the latter in the “sleeve” and send it to the microwave. Power 900 W and seven minutes - and you can get it.

    It's time to assemble the snack cake. We cover the first cake with a layer of onions and herring, the second with mushrooms and onions, sparingly, with mayonnaise, the third cake is hidden under carrots, and that under mayonnaise. Repeat the sequence one or two more times until there is enough filling. The topmost layer should be carrots with mayonnaise. Cover it thickly with grated cheese and herbs.

    Full readiness occurs after “resting” in the refrigerator. And the longer the cake sits, the better it is to cut it.

    There are probably no housewives who have not made a cake from waffle cakes at least once in their lives. This is a fairly simple and common dessert, familiar to many from childhood. Nowadays, buying ready-made waffle cakes is not a problem. They come in different shapes, sizes and colors. All that's left to do is prepare the cream, which will serve as a layer for the finished cakes.

    Of course, the easiest and fastest option is to grease the cakes with boiled condensed milk or ready-made “Toffee”, which can also now be bought without problems. But if you still want to get a more delicious and not banal version of waffle cake, I advise you to prepare cream. You can also disguise the cake itself by smearing the sides and top with this cream, and then sprinkle with nut-biscuit crumbs. Thus, from the outside the cake will look like a honey cake.     To prepare a cake from waffle cakes, prepare the necessary ingredients: actually, these are the cakes and what you will need to prepare the cream.

    Let's start by preparing the cream. All products must be at room temperature. Place butter and boiled condensed milk into a blender bowl.

    Beat at medium speed.

    Then add 2-3 tbsp. regular condensed milk and pour in cognac or liqueur 3-4 tbsp. Beat the mixture again until smooth. You should get a homogeneous soft cream as in the photo.

    Now you can assemble the cake. Lubricate each cake well with cream and cover with the next cake. If the cakes are multi-colored, then it is better to alternate them.

    When all the cakes are coated with cream, spread on the sides of the cake. Place a flat board on top of the waffle cake and place a weight so that the cakes grip each other well. Leave the cake in this state for 1 hour.

    While the cake thickens, prepare the crumbs. For it, you can take any shortbread cookies and nuts. I took oatmeal cookies and walnuts. Grind them using a sharp knife attachment.

    Remove the weight and brush the top of the cake with the remaining cream. Then sprinkle the sides and top with the prepared crumbs. Leave the cake to soak for another 1 hour.

    After this time, you can cut the waffle cake into convenient portions and invite your loved ones to the table.

    The easiest way to make a waffle cake is with condensed milk, the most common one, home-cooked or ready-made store-bought “Toffee”. All the cakes need to be coated with condensed milk and wait until they are soaked. The result will be a very sweet cake, with a characteristic “stickiness” and the taste of condensed milk.

    Ingredients

    • waffle cakes - 1 pack.
    • condensed milk - 1 can
    • butter - 200 g
    • chocolate glaze, nuts, coconut flakes - for decoration

    Total cooking time: 10 minutes + 3 hours for soaking / Yield: 8-10 servings

    Preparation

      First you need to prepare the cream. I beat the soft butter with a mixer, it should approximately double in size, become more voluminous and airy. Butter must be of high quality; we are not talking about replacing margarine at all! And don’t forget to take the pack out of the refrigerator in advance so that the butter softens to room temperature, then when whipped it will easily turn into a fluffy cream for the cake.

      As soon as the butter is whipped, I gradually, about 1 spoon at a time, begin to pour in condensed milk in a thin stream, without turning off the mixer. Both regular and boiled condensed milk will do. It must also be of high quality, without vegetable fats, and must be at room temperature so that the cream does not separate.

      The result is a very delicate and airy cream that holds its shape perfectly.

      I coat the waffle cakes with cream evenly so that they are soaked from the center to the very edges.

      I had enough cream for 9 cakes. I crushed the remaining 10th wafer that was in the package into crumbs and used it to sprinkle the sides of the cake. You can use cookie crumbs or crushed nuts for sprinkling.

      The top was poured with chocolate glaze, sprinkled with coconut flakes and decorated with nuts. For the glaze, combine and boil for a couple of minutes: 3 tbsp. l. sugar, 5 tbsp. l. milk, 3 tbsp. l. cocoa powder and 50 g butter. If you do not plan to decorate the cake with anything, then place a weight on top (for example, a board and a jar of water) so that the top cake adheres to the bottom ones.

      Before serving, the waffle cake should stand in the refrigerator for at least 3 hours so that all layers are completely soaked, after which you can brew tea. Bon appetit!

    A cake made from ready-made crispy waffle cakes significantly saves the time of a hospitable and cordial hostess. If your friends show up unexpectedly, you will always have a few minutes to please them with a simple but original dessert of your own making. The filling for the waffle cakes can be any, depending on what products you have in your refrigerator at the moment. You can also experiment with ingredients and create your own unique masterpieces.

    The simplest cake made from ready-made waffle cakes

    For a large cake, you will need two packages of cake layers at once. Here is a complete list of required ingredients:

    • Round waffle cakes - 10 pieces.
    • A can of boiled condensed milk.
    • Can of condensed milk GOST.
    • butter - 200 grams.
    • Sour cream 20% fat - 200 grams.

    This cake will be filled with two types of fillings at once, so stock up on two mixing bowls. The tiers themselves must be assembled on a flat plate of large diameter.     Two types of fillings

    The butter must first be melted to room temperature. Combine the ingredient with boiled condensed milk and mix thoroughly with a fork or whisk.

    Tip: the cream will be more tender if boiled condensed milk is prepared at home. Place the tin can in a pan of water, bring to a boil, and then simmer over moderate heat for one and a half to three hours. The prepared filling for the waffle cakes will be used to soak the lower half of the cake. Immediately after mixing the ingredients, you can begin laying the layers.

    Another little tip: to prevent the cake from sliding on the surface of the plate during assembly, apply a little filling to the center of the dish, and only then place the first layer. This way, your cake will also be linked to the dish itself.

    As you can guess, the second type of cream will use sour cream and regular condensed milk. The lighter filling has a weightless and light structure, unlike the oil version. To whip the second cream, you must use clean cutlery to avoid mixing shades.

The bottom five layers will be soaked in a thick buttery filling. Therefore, spread it with a thin layer, applying some effort. It absorbs well, so apply it in a thick layer.

    Cake decoration

    When the top layer of the cake is coated with sour cream filling, turn your attention to the ends of the dessert. Take a knife with the remaining cream and treat the side surface with it.     As we have already said, the filling for waffle cakes can be anything. The next cake will have only five layers of cake layers, so it can disappear from the tray in one tea party with a large company. Here's what you need to prepare it:

    • Wafer cakes - 5 pieces (one package).
    • Premium quality butter - 200 grams.
    • 2 tablespoons cocoa powder.
    • One glass of granulated sugar.
    • 4 tablespoons of honey.
    • Crushed walnuts - 1.5 cups.

    This filling will need to be cooked a little. Therefore, take the butter out of the refrigerator and put it in a saucepan. Send honey, sugar, nuts and cocoa powder there. Mix everything thoroughly, bring to a boil, and then cook over moderate heat for three minutes. Don't forget to stir the mixture all the time. When the cream has cooled slightly, saturate each cake with it.

    You can also soak the top, but in this case it will be better if the top cake is left without decoration. And again, little culinary tricks come to your aid: a cake assembled using warm filling will be much tastier if you put it in the refrigerator for a couple of hours before serving.

    Fruit filling

    You can use any fruit for this cake, as long as you and your guests like them. The recipe benefits from the complete absence of sugar and condensed milk. List of ingredients for the cake:

    • Waffle cakes - 5 pieces.
    • Curd mass without filler - 200 grams.
    • Berries (raspberries or strawberries) - half a glass.
    • One banana.
    • One big peach.

    As we have already said, the fruit filling for waffle cakes can be any: tangerines, oranges, kiwis, canned pineapples, baked apples, etc. Assemble the cake as follows. Coat each cake with curd mixture, and cover the cake with fruit cut into pieces. If you have a strong sweet tooth, you can add a little sugar to the curd mass. Decorate the top of the cake as you wish and refrigerate for a couple of hours until the cakes are completely soaked.

    You can use waffle cakes to make more than just a quick cake. Our next recipe will surprise some people. The non-sweet filling for waffle cakes is made from liver. This product is ideal for preparing cold original snacks. For chicken liver soufflé you will need the following ingredients:

    • Liver - 300 grams.
    • Wafer cakes - 2 pieces.
    • Egg - 2 pieces.
    • Full-fat sour cream - 2 tablespoons.
    • 1 glass of milk.
    • Salt.

    Place the liver in a deep frying pan and simmer it for 10 minutes, then add sour cream and mix everything thoroughly. Separately, beat the eggs with milk (as for an omelette) and add salt to taste. Grease the round with butter or cover with parchment paper.
